If you're in a hurry or just tired after work try this one:
2 heads of lettuce
2 medium tomatoes
1 bunch arugula
1/2 cup extra virgin olive oil
5 tsp. lemon juice
2 tsp. white wine vinegar
1 cup shredded ricotta salata cheese
3 tbsp. chopped chives
Salt and pepper
Wash the vegetables and drain well.
Mix together all the vegetables.
Whisk together in a bowl the olive oil, lemon juice, wine vinegar, pepper and salt.
(Be careful with the salt! because the ricotta is already salted.)
Top with the ricotta cheese and chopped chives and serve.
